  • 1 old-fashioned roll
  • 125 ml lukewarm milk
  • 300 g veal mince
  • 2 Eggs
  • Salt
  • pepper (ground)
  • nutmeg
  • 0.5 bunch chives (about 15 g)
  • 1.2 l beef broth

Instructions

    Cut the roll into cubes and soak in lukewarm milk for 10-15 minutes. Mix the veal mince with the egg and the soaked, well-expressed roll pieces; season with salt, pepper, and nutmeg. Wash the chives, dry, and cut into small rings.

    Heat the beef broth and use two teaspoons to scoop meat dumplings from the mixture, letting them cook in the broth. Serve the broth with dumplings on preheated soup plates, garnished with chive rings.
