Broccoli Salad with Goat Cheese

Ingredients

  • 800 g Broccoli florets
  • Salt
  • 20 g Parsley (1 handful)
  • 2 stalks Mint
  • 1 Shallot
  • 2 tbsp Balsamic vinegar
  • 3 tbsp Olive oil
  • Pepper
  • 150 g Goat cheese
  • 30 g Pine Nuts (2 tbsp)

Instructions

    Wash the broccoli, remove the tough ends and cut into bite-sized pieces. Cook in boiling salted water for about 6-8 minutes until crisp-tender.

    Meanwhile, wash, dry, and finely chop the parsley and mint. Peel and dice the shallot. Mix the herbs, balsamic vinegar and olive oil in a bowl and season with salt and pepper. Crumble in the cheese. Toast the pine nuts in a pan without fat until fragrant, let them cool slightly and add them.

    Drain the broccoli, rinse with cold water and drain well. Distribute the broccoli salad on 4 plates and drizzle with the dressing.
