Broccoli Cream Soup with Fried Oyster Mushrooms

Ingredients
- 1 Spring onion
- 500 g broccoli florets
- 1 tbsp Sesame oil
- 3 tsp miso paste
- 700 ml vegetable broth
- 2 tsp dark soy sauce
- 1 tsp Lime juice
- 200 g oyster mushrooms
- 2 tbsp plant-based oil
- Pepper (freshly ground)

Clean and slice the spring onion. Roughly chop the broccoli florets. Heat the sesame oil in a pot and sauté the spring onion for 2 minutes. Add the broccoli and continue to sauté. Deglaze with vegetable broth, stir in the miso paste, and simmer for about 25 minutes until the broccoli is tender. Blend the soup, adding more broth if needed, and season with soy sauce and lime juice.

Clean the oyster mushrooms with a damp kitchen cloth. Heat oil in a pan and fry the mushrooms for about 8 minutes on all sides until crisp. Remove and drain on paper towels. Ladle the soup into bowls, top with the fried oyster mushrooms, and finish with freshly ground pepper.
