Broccoli Cream Soup with Wild Rice

Ingredients
- 50 g wild rice
- Salt
- 500 g broccoli
- vegetable stock
- 1 cup heavy cream
- ground pepper
- freshly grated nutmeg
- pink peppercorns
Instructions

Cook the wild rice in salted water according to package instructions. Drain and set aside.

Clean the broccoli and cut into florets. Peel and finely chop the stems.

Bring the vegetable stock to a boil. Add the broccoli and simmer for 10 minutes. After 6 minutes, remove some florets with a slotted spoon and set aside.

Puree the broccoli in the stock. Stir in the heavy cream and bring to a boil. Season with salt, pepper, and nutmeg.

Add the broccoli and wild rice back into the soup and heat briefly. Sprinkle with coarsely chopped pink peppercorns before serving.
