Broccoli Cheese Cake

Ingredients
- 150 g flour
- 30 g cold butter
- 1 pinch salt
- 2 tbsp quark
- butter (for the pan)
- 500 g broccoli florets
- 350 ml milk
- 250 ml Whipping Cream
- 6 Eggs
- 100 g grated Gruyère cheese
- Salt
- pepper (from the mill)
- Nutmeg (freshly grated)
- 50 g walnuts (coarsely chopped)
Instructions

Knead the flour with cold butter, salt and quark quickly into a firm, smooth dough. If necessary add a little water. Wrap in cling film and chill for about 20 minutes.

Preheat the oven to 180°C fan or conventional heat.

Meanwhile blanch the broccoli in boiling salted water for 2-3 minutes, shock in ice water and drain. Whisk together milk, cream, eggs and 50 g cheese. Season with salt, pepper and nutmeg.

Roll out the dough and place it in a buttered quiche tin, forming a rim. Distribute the broccoli and walnuts on top and pour the egg mixture over them. Sprinkle with the remaining cheese and bake for about 35 minutes until golden brown.
