Ingredients
- 200 g Goat cheese
- 80 black, pitted olives (chopped)
- 4 sheets brick dough
- 2 tbsp olive oil
- 1 bunch thyme (chopped)
- Salt
- pepper (ground)
- olive oil (for frying)
Instructions

Crush the goat cheese with a fork and mix with olives, 2 tbsp olive oil, and chopped thyme. Season with salt and pepper.

Place the filling on one diagonal half of each dough square so that folding creates a triangle. Wet the edges with water and press firmly together.

Pan-fry both sides in plenty of hot olive oil for about 6 minutes until golden brown. Drain on kitchen paper.
