Breaded Pork Chops

Ingredients
- 2 pork chops
- Salt
- Pepper (freshly ground)
- 2 tbsp flour
- 1 egg
- 3 tbsp breadcrumbs
- 2 tbsp clarified butter
- 1 medium zucchini
- 1 red chili pepper
- 2 tbsp olive oil

Wash the zucchini, trim the ends and slice into rounds. Sprinkle with a little salt and let sit for about 20 minutes, then pat dry and fry in hot olive oil until golden yellow; remove and keep warm.

Halve the chili pepper lengthwise, remove seeds, finely dice it, and sauté in the remaining oil. Then spoon over the zucchini slices.

Season the pork chops with salt and pepper.

Place flour, beaten egg, and breadcrumbs on separate plates. Dredge each chop first in flour, then in egg, and finally in breadcrumbs. Fry in hot clarified butter for about 4 minutes per side until golden yellow; remove and arrange on a plate with the zucchini slices. Top each chop with a dollop of crème fraîche and serve with baguette.
