Ingredients

  • 2 onions
  • 1 Garlic clove
  • 3 tbsp butter
  • 250 g stale white bread
  • 2 tbsp freshly chopped herbs (e.g. dill and parsley)
  • 1 pinch dried peperoncino (grated)
  • 120 g grated pecorino
  • Pepper (freshly ground)
  • 0.5 tsp coriander seeds (crushed)
  • Salt
  • freshly grated pecorino for garnish

Instructions

    Peel and finely dice the onions and garlic. In 1 tbsp hot butter, gently sauté in a pot until translucent. Add broth and simmer quietly for about 10 minutes.

    Preheat the oven to 180°C fan.

    Slice the bread and brown both sides in a pan with the remaining butter. Arrange the slices in a baking dish, sprinkle with herbs, peperoncini, and cheese. Pour the soup over the bread, season with pepper and coriander, and bake for about 20 minutes until golden brown. Remove from oven and adjust seasoning with pepper and a pinch of salt if needed.

    Serve the soup in preheated bowls, topped with freshly grated pecorino.
