Ingredients

  • 1 rabbit (ca. 1.3 kg, prepped and cut)
  • 2 tbsp clarified butter
  • Salt
  • pepper (ground)
  • 2 shallots (sliced into rings)
  • 1 whole garlic bulb
  • 3 tomatoes (peeled, seeded, diced)
  • 2 Bay leaves
  • 0.5 tsp juniper berries
  • 2 cloves
  • 1 pinch saffron strands
  • 500 ml dry white wine
  • 3 tbsp red wine vinegar
  • 2 oranges (unwashed, sliced)

Instructions

    Season rabbit pieces with salt and pepper and brown them in clarified butter until golden all over; remove and keep warm in a baking dish.

    In the pan fat, sauté shallot rings and the garlic bulb until shallots become translucent; add tomatoes, bay leaves, juniper berries, cloves, and saffron to deglaze. Pour in wine, vinegar, and 1 cup of water, season with salt, bring to a boil, then remove from heat and pour over rabbit pieces.

    Cover the baking dish with foil and bake at 200°C for about 1 hour; lift the foil and continue cooking for another 15 minutes until done. Garnish with orange slices before serving.
