Ingredients
- 1 rabbit (cut into portions)
- Salt
- Cayenne pepper
- 500 g onions
- 8 tbsp olive oil
- 1 head garlic
- 1 tsp saffron
- 250 ml white wine
- 50 g Raisins
- 4 bay leaves
Instructions

Preheat oven to 200°C. Rinse rabbit pieces, pat dry and rub with salt and pepper. Slice onions into rings.

Heat olive oil in a roasting pan. Brown the rabbit pieces all around. Remove from pan and set aside.

Add onions and half of the garlic head to the pan fat and sauté briefly. Return rabbit to pan and cover with about half the onions. Dissolve saffron in white wine and pour over. Add raisins and bay leaves.

Cover and simmer for 30-40 minutes. Season sauce with salt and pepper. Serve with rice or country bread.
