Ingredients

  • 800 g pork tenderloin
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp plant oil
  • 150 ml dry white wine
  • 8 shallots
  • 4 Garlic cloves
  • 2 tbsp linden blossom honey
  • 1 tbsp Lemon Juice

Instructions

    Preheat the oven to 160°C with fan and top heat.

    Wash and pat the pork dry. Season with salt and pepper, then sear in a pot with hot oil all around. Deglaze with white wine and remove from heat.

    Peel the outer layers of the shallots and crush the garlic. Distribute around the tenderloin and cover in the oven for about 15 minutes to braise. Remove the lid and continue cooking for another 20-25 minutes, adding water as needed and basting occasionally. Mix honey with a little water and brush onto the pork during the last 10 minutes.
