Braised Herb-Garlic Rabbit with Apples

Ingredients
- 4 rabbit legs
- salt, pepper
- each 2 tsp finely chopped rosemary and thyme
- lettuce leaves
- 2 young fresh garlic cloves
- 4 tbsp olive oil
- 200 ml white wine
- 400 ml poultry stock
- 2 green apples

Rinse the rabbit legs and pat dry. Rub with salt and pepper. Mix the herbs and rub them vigorously into the rabbit legs. Trim the stems from the garlic and slice the bulbs into thick rounds.

Heat olive oil in a roasting pan. Brown the rabbit legs and garlic until golden brown. Deglaze with white wine and pour in poultry stock. Roast in a preheated oven at 180°C (gas: level 2-3, convection: 160°C) for 50-60 minutes, turning the legs occasionally.

Wash the apples, quarter them, core, and cut into pieces. Add to the pan about 15-20 minutes before the meat is done to simmer together. Season the broth with salt and pepper.
