Ingredients

  • 2 kg small potatoes
  • 100 g coarse sea salt
  • 2 green chili peppers
  • 4 Garlic cloves
  • coriander (½ bunch each)
  • parsley (½ bunch each)
  • Salt
  • 0.25 tsp ground cumin
  • 3 tbsp mustard
  • 100 ml olive oil
  • 4 tbsp red wine vinegar

Instructions

    Wash the potatoes, put them in a pot and cover with water. Stir in salt and cook for about 25 minutes.

    For the mojo chili, clean and wash. Peel the garlic. Wash the herbs and shake dry. Remove leaves and roughly chop everything. Add remaining ingredients and blend. Taste.

    Drain the potatoes and steam until all liquid has evaporated and the potatoes are dry and crinkled.

    Serve the potatoes with the mojo.
