Blueberry Jam

Ingredients

  • 2000 g blueberries
  • 400 ml water
  • 5 sprigs lemon thyme (optional)
  • 2 limes (juice)
  • 500 g gelatin sugar (3:1)

    Wash the blueberries, remove stems and any bad berries, and drain well. Add 400 ml water to a pot and cook until all berries burst. Line a large colander with a damp dishcloth, place it over a big pot. Pour the blueberry mixture into the colander and let the juice drain. Use the cloth to press out remaining juice from the berries.

    Wash the lemon thyme, shake dry, and tie into a bundle. Measure 1250 ml of the liquid. Squeeze the limes and add their juice. Stir gelatin sugar into the liquid mixture and add the thyme bundle. Bring to a boil over high heat while stirring constantly, simmer for 4 minutes with vigorous bubbling, continuing to stir; then remove the thyme.

    Perform a gel test and fill jars that have been hot-washed with the jam, seal tightly, and let cool.
