Blood Sausage on Lentil Vegetable with Spinach

Ingredients
- 120 g small brown lentils
- 1 tbsp butter
- 0.5 l vegetable broth
- 2 tbsp vinegar
- Salt
- pepper (from grinder)
- 1 blood sausage
- 300 g leaf spinach
Instructions

Wash the lentils in cold water and drain well.

Heat butter in a pot, add lentils and pour in broth; cover and simmer for about 30 minutes. Season with salt, pepper, and vinegar.

Wash, rinse, and drain the spinach.

Slice the blood sausage and fry it in a pan. Keep warm briefly.

Add the spinach to the same pan, toss, and season with salt and pepper.

Serve the lentil vegetable topped with sliced blood sausage and spinach on a preheated plate. Garnish with parsley if desired.
