Blinis with Smoked Salmon

Ingredients
- 150 g buckwheat flour
- 150 g all-purpose flour
- 1 pinch salt
- 0.5 cube yeast (20 g)
- 300 ml lukewarm milk
- 2 tbsp liquid butter
- 2 Eggs
- butter fat (for frying)
- 200 g quark
- 2 Tbsp whipping cream
- 1 tbsp Lemon Juice
- 2 tbsp chives rolls
- 400 g smoked salmon (thinly sliced)
- chives (for garnish)
Instructions

Separate the eggs. Mix the flours. Dissolve the yeast in the milk and stir with liquid butter and salt into the flour mixture, cover and let rise in a warm place.

Beat the egg whites until stiff and fold them into the batter before baking.

Heat some butter fat in a pan, drop a tablespoon of batter, flatten slightly and cook golden brown on both sides, keep warm. (Total 12 pieces)

Whisk quark with cream and lemon juice, season with salt and pepper, stir in chives.

Spread 8 blinis with the quark mixture and top with salmon. Stack two of these blinis together and place the remaining blinis on top. Arrange on plates and garnish with herb quark and chives as desired.
