Ingredients

  • 600 g fresh beans
  • 2 EL bean seasoning
  • Ice cubes

Instructions

  1. 1.

Bring water with bean seasoning to a boil in a large pot for blanching.

  2. 2.

Prepare cold water with ice cubes in a large bowl and set up a salad strainer.

  3. 3.

Wash the beans, remove any strings if necessary, trim ends lightly, halve larger beans.

  4. 4.

Cook the beans in 2-3 batches in boiling water for about 10 minutes each. They should be cooked but still firm. Remove them with a slotted spoon and immediately plunge into ice water to cool quickly. Let the vegetables chill in the ice bath. When the beans are cold, drain them in a salad strainer. Repeat with the second and third batches.
