Blackthorn Berry Cake

Ingredients
- 500 g blackthorn berries
- 4 eggs
- 4 egg whites
- 50 g Brown sugar
- 8 tbsp eggnog
- 100 g honey
- 0.5 packet vanilla sugar
- 2 tbsp Cornstarch
- 100 g whipping cream
- 125 g whipping cream
- 100 g blackthorn berries
- 300 g butter
- 50 g grated hazelnuts
- 150 g brown sugar
- 0.5 packet vanilla sugar
- 4 yolks
- 250 g flour
- 2 tsp Baking powder
- 1 tbsp cocoa powder
- 8 tbsp eggnog

Line a baking sheet with parchment paper. Cream the butter, sugar and vanilla sugar until fluffy. Gradually fold in the yolks. Mix the flour with baking powder and cocoa, then stir in the nuts. Spread the dough onto the sheet, smooth it out and brush with eggnog.

Wash and pat dry the blackthorn berries; spread half of them over the dough. Separate the eggs and beat all eight whites very stiffly. Whisk in the sugar. Mix the yolks with eggnog, honey, vanilla sugar and cornstarch, then fold in the cream.

Carefully fold everything into the meringue and spread it over the dough. Distribute the remaining berries on top. Bake in a preheated oven at 160 °C for 45 minutes until golden brown. Let cool before serving, then garnish with whipped cream and the leftover berries.
