Ingredients

  • 4 kg red blackcurrants
  • 2 l water
  • 2 kg sugar
  • juice of one lemon

Instructions

    Wash the berries, drain and remove stems. Place them in a pot, mash, and bring to a boil with water.

    Spread the cooked fruit over a muslin cloth stretched between two chair legs and let it drain. Measure the extracted juice and stir in sugar (maximum 650 g per litre).

    Bring the juice to a boil once more, skim off foam, stir in lemon juice, pour into bottles and seal tightly.
