Blackberry Goat Cheese Pizza

Ingredients
- 0.5 cube Yeast
- 1 tsp agave syrup
- 500 g spelt flour
- Salt
- 250 g blackberries
- 1 tbsp apple juice
- Pepper
- 1 Red Onion
- 250 g ricotta (30% fat in total)
- 100 g goat cheese roll (45% fat in total)
- 20 g arugula

Crush the yeast and pour agave syrup over it. Set aside until the yeast dissolves and bubbles.

Add flour and 1 tsp salt to a bowl. Add 350 ml lukewarm water and the yeast mixture, then knead into a smooth dough. Let rest covered for at least 1 hour.

Wash the blackberries. Mash a small handful with a fork, mix in apple juice, and season with pepper. Peel and slice the onion into rings. Season ricotta with salt and pepper and whisk until smooth. Cut goat cheese into cubes.

Divide the dough into four portions and shape into balls. Let rest covered for another 15 minutes. Wash arugula and shake dry.

Roll out the dough balls on a floured surface. Spread ricotta over all four bases, top with whole blackberries and onions, then sprinkle goat cheese. Bake in a preheated oven at 250 °C (220 °C fan; gas: highest setting) or on a pizza stone for 10–15 minutes until crisp.

Season the blackberry goat cheese pizza with salt and pepper, garnish with arugula, and drizzle blackberry dressing over it.
