Black & White Muffins

Chocolate craving? These juicy black-and-white muffins from Spoonsparrow are easy to make and always a hit!

Ingredients

  • 100 g softened butter
  • 7 Medjool dates
  • 100 g applesauce
  • 250 g spelt flour Type 1050
  • ½ packet baking powder
  • 1 pinch salt
  • 150 ml milk (1.5% fat)
  • 3 tbsp cocoa powder
  • 150 g cream cheese
  • 1 tbsp honey

Instructions

    Fill a muffin tin with paper liners or grease it. Beat the butter in a bowl until fluffy, then add the dates and applesauce and blend into a smooth puree. Mix this with the beaten eggs, then stir in flour, baking powder, salt and 125 ml milk.

    Take half of the batter and fold in 2 Tbsp cocoa along with the remaining milk. Spoon the light batter and dark batter alternately into the cups. Bake in a preheated oven at 180 °C (160 °C fan; gas 2–3) for about 35 minutes.

    Let the muffins cool on a wire rack. While they cool, whisk cream cheese until creamy, add 1 Tbsp cocoa and honey, then blend into a smooth spread.

    Arrange the muffins on a plate. Pipe the cream onto each muffin with a star tip. Dust with powdered sugar if desired and decorate with festive stars before serving.
