Berry Tartlets with Vanilla Cream

Ingredients
- 80 g soft butter
- 80 g sugar
- 1 packet vanilla sugar
- 2 Eggs
- 0.5 untreated lemon (grated zest)
- 150 g flour
- 2 tsp Baking powder
- 5 tbsp milk

- 500 g mixed fresh berries (or other fruit)
- 300 ml milk
- 1 vanilla pod
- 3 egg yolks
- 60 g sugar
- 20 g flour
- 1 pinch salt
- powdered sugar
Instructions

Beat butter with sugar and vanilla sugar until fluffy, then stir in eggs and lemon zest. Mix flour with baking powder and fold into the mixture with milk.

Line small tins with butter, dust with a little flour, spread dough inside and smooth out.

Bake in preheated oven at 175°C fan for about 20-25 minutes, remove, take out of tins and cool.

Slice vanilla pod lengthwise, scrape out seeds and stir into milk, bring to boil.

Whisk egg yolks with sugar in a bowl until creamy, then fold in flour.

Pour hot milk into the yolk mixture, return everything to pot, remove vanilla pod and whisk over low heat into a cream, do not boil!

Let vanilla cream cool, dust surface lightly with sugar to prevent skin formation.

Wash berries, trim and chop if desired.

Spread vanilla cream onto tartlets, top with berries and dust powdered sugar.
