Cream Cheese Tartlets with Forest Berries

Ingredients

  • 120 g butter
  • 50 g powdered sugar
  • 50 g ground almonds
  • 150 g flour
  • 1 egg yolk
  • flour (for working)
  • butter (for the molds)
  • 200 g Cream cheese
  • 100 g raspberries
  • 100 g blueberries
  • 100 g Strawberries
  • 50 g red currants
  • 60 g powdered sugar
  • 3 tbsp whipping cream
  • mint (as decoration)

Instructions

    For the dough, place butter in small pieces into a bowl. Add powdered sugar, ground almonds and flour, and rub with hands to a crumbly consistency.

    With egg yolk and about 4 tbsp water, knead into a smooth dough. Form a ball, wrap in cling film and chill in the refrigerator for about 30 minutes.

    Preheat the oven to 210°C (410°F) fan‑forced.

    Roll out the dough on a floured surface and prickle it several times with a fork. Butter and flour six tartlet tins (about 8 cm). Line the tins with dough and bake. After 10 minutes reduce temperature to 180°C (350°F) and bake for another ~10 minutes. Let cool after baking.

    Meanwhile, whisk cream cheese with powdered sugar and whipping cream for the filling.

    Wash, dry berries; slice strawberries. Fill cooled tartlets with cream cheese mixture, top with berries, garnish with mint, and serve immediately.
