Berry Pancakes

Ingredients
- 250 g flour
- 2.5 tsp baking powder
- a pinch of salt
- 2 Eggs
- 300 ml milk
- 2 tbsp liquid honey
- butter (for frying)
- 450 g mixed berry mix (frozen)
- 150 ml red currant juice
- 2 tbsp rum
- 2 tbsp sugar
- 150 g whipping cream
Instructions

Clean berries or let them thaw. Mix rum with sugar and red currant juice, pour over the fruit and marinate for at least 4 hours in the refrigerator.

For the batter, put all ingredients into a mixing bowl and process with an electric hand mixer until smooth. Let rest for 30 minutes.

Heat some butter in a pan for the pancakes, pour a bit of batter, spread to about 12 cm diameter, bake 2-3 minutes on one side, flip and finish baking. Remove and keep warm until batter is used up.

Whip the cream stiff. Serve pancakes with berry mix and whipped cream.
