Berry Cherry Pudding with Whipped Cream

Ingredients
- 600 g mixed berries (e.g., strawberries, raspberries, and red currants)
- 200 g cherries
- 1 lemon (juice)
- 2 tbsp sugar
- 250 ml apple juice
- 1 tbsp Cornstarch
- 50 g dark chocolate
- 2 sprigs Mint
- 150 ml whipped cream
- Mint leaves (for garnish)

Wash, trim, and drain the berries. Halve or quarter strawberries depending on size. Wash, pit, and drain cherries.

Bring lemon juice, sugar, and apple juice to a boil. Whisk cornstarch with 2 tbsp water until smooth and use it to thicken the fruit sauce while stirring. Simmer until thickened. Add berries and cherries and simmer for another 2-3 minutes so berries begin to break down but remain slightly chunky. Remove from heat and let cool.

Finely chop chocolate. Rinse mint, shake dry, pluck leaves, and finely chop. Whip cream stiffly, fold in mint and chocolate. Spoon the red pudding into bowls or cups, top with the chocolate-mint whipped cream, and garnish with mint.
