Ingredients

  • 500 g strawberries
  • 2 tbsp brown sugar
  • juice of one lemon
  • 450 g crème fraîche
  • 150 g yogurt
  • 300 g ladyfingers
  • 50 g red currants

Instructions

    Quarter all strawberries except a few for garnish. Sprinkle with 1 tbsp sugar. Bring the lemon juice, remaining sugar and 100 ml water to a boil. Stir until the sugar has fully dissolved. Whisk the crème fraîche with the yogurt until smooth. Briefly dip each ladyfinger in the lemon mixture and line the bottom and sides of the mold.

    Fill half of the cream into the mold. Top with half of the strawberries and their juice. Repeat the same sequence and finish with a layer of ladyfingers. Cover everything with a plate, weigh it down and refrigerate overnight. Unmold the Charlotte, spread the remaining crème fraîche on top, and decorate with strawberries and red currants.
