Chocolate Meringues

Ingredients

  • 3 egg whites
  • 170 g sugar
  • 1 pinch salt
  • 1 EL lemon juice
  • 100 g dark chocolate (min. 55% cocoa)
  • 1 TL cocoa powder

Instructions

    Beat the egg whites with the lemon juice until foamy, gradually adding the sugar and continuing to beat until the mixture is glossy white and forms stiff peaks. Fill a piping bag fitted with a large star tip and pipe about 50 stars onto a sheet lined with parchment paper.

    Place the sheet in the oven (middle rack) and bake at 120 °C fan-forced for about 45–50 minutes (dry more than bake), leaving a small gap in the door. The meringues should remain slightly soft inside and develop minimal color during baking.

    Remove and cool. Melt the chocolate over a double boiler and use a spoon to attach two meringue stars together with chocolate. Let dry and lightly dust with cocoa powder.
