Berlin Spice Bread

Ingredients

  • 50 g dark chocolate
  • 40 g lemon zest
  • 2 Eggs
  • 220 g sugar
  • 1 Tbsp vanilla sugar
  • 1 tsp gingerbread spice
  • 70 g apple syrup (or beetroot syrup)
  • 1 tbsp rum
  • 250 g flour
  • 1 tsp Baking powder
  • 50 g whole almonds (peeled)
  • 50 g hazelnuts (peeled)
  • 50 g powdered sugar

Instructions

    Melt the chocolate for the dough and finely chop the lemon zest.

    Preheat the oven to 200°C with top and bottom heat.

    Beat the eggs with 1-2 tbsp hot water in a mixing bowl using a mixer on high speed until frothy. Mix the sugar with vanilla sugar and gingerbread spice, sift into the mixture and beat for another 2 minutes. Stir in the apple syrup, cooled melted chocolate, and rum. Sift the flour with baking powder onto the egg mixture and fold in. Finally fold in the lemon zest and almonds. Spread the dough evenly on a parchment-lined tray and bake in the preheated oven (center) for about 20 minutes (test stick). Remove and cool.

    Sift the powdered sugar and mix with a little water to make a thick glaze. Brush over the Berlin spice bread and let dry. Only then cut into pieces and serve.
