Ingredients

  • 4 slices old farmer's bread
  • 4 tbsp butter
  • 1 large onion
  • 1 tbsp flour
  • 1.25 l meat broth
  • 250 ml light beer
  • 1 Garlic clove
  • 2 egg yolks
  • 3 tbsp whipping cream
  • Salt
  • Pepper
  • nutmeg
  • 2 tbsp chive ribbons

    Dice the bread into small cubes and fry them in hot butter until golden brown all around. Remove half from the pot and drain on kitchen paper. Peel and finely chop the onion and garlic, add to the remaining bread cubes in the pot and sauté briefly. Dust everything with flour and gradually pour in the broth and beer while stirring.

    Bring to a boil and simmer gently for about 30 minutes. Then puree the soup. Whisk the egg yolks with cream until smooth, stir into the hot soup and mix well so the soup thickens (do not cook further!). Season with salt, pepper and nutmeg. Add the bread cubes and chives and serve.
