Belgian Waffles

Ingredients

  • 50 g spelt flour (Type 630)
  • 50 g whole spelt flour
  • 150 ml Heavy Cream
  • 2 egg yolks
  • 1 pinch vanilla bean paste
  • 30 g liquid butter
  • 1 pinch lemon zest
  • 3 egg whites
  • 1 pinch salt
  • 30 g coconut blossom sugar

Instructions

    Sift both flours into a bowl, stir in cream, egg yolks, vanilla bean paste, butter and lemon zest. Beat the egg whites with salt and coconut blossom sugar until stiff and gently fold them in. Preheat waffle iron and grease if necessary. Add 1-2 tablespoons of batter each time and bake the waffles golden brown one after the other (keep warm in the oven if desired until all are baked).
