  • 0.75 l vegetable broth (glass or instant)
  • Lemon juice
  • Salt
  • Pepper
  • 1 apple
  • 1 spring onion (finely sliced)

  • crispy duck meat cut into small pieces (optional)

    Thinly peel and dice the beetroot. Let it simmer in hot vegetable broth for 20 minutes over low heat, remove 2-3 tablespoons, then puree the rest, strain if desired, reheat, and season with lemon juice, salt, and pepper.

    Wash the apple, quarter it, remove the core, and cut into small pieces. To serve, ladle soup onto plates, garnish with apple pieces, reserved beetroot cubes, a few duck meat chunks, carrot slices, and spring onion.
