Ingredients
- 400 g chicken breast fillet
- 2 stalks lemongrass
- 0.25 bunch cilantro
- 1 red chili pepper
- 2 tbsp toasted sesame oil
- 0.5 l poultry stock
- 250 ml coconut milk
- 1 tbsp lime juice
- 1 tbsp fish sauce

Pat the chicken meat dry with vinegar and cut into bite-sized pieces. Cut the lemongrass into about 2 cm segments. Wash and tear the cilantro. Wash the chili pepper and slit it lengthwise.

Heat the sesame oil in a wok. Add the lemongrass and chili pepper. Pour in the poultry stock and coconut milk, then simmer for about 10 minutes.

Add the chicken pieces to the soup and let them cook for 5 minutes. Stir in the cilantro, lime juice, and fish sauce, seasoning with salt and freshly ground pepper. Transfer to sterilized jars, seal tightly with a rubber band, place upside down, and allow to cool.
