- 0.75 l vegetable broth (instant)
- 0.5 lemon (juiced)
- 4 tbsp crème fraîche
- Salt
- Pepper (freshly ground)
- dill (for garnish)

Thinly peel and dice the beetroot. Simmer in hot vegetable broth for about 20 minutes over low heat, then puree with a blender, reheat, and season with lemon juice, salt, and pepper.
