Beer Goulash

Ingredients
- 600 g beef (from shank or shoulder)
- 1 onion
- 1 Garlic clove
- 400 g Potatoes
- 3 Carrots
- 2 tbsp Rapeseed oil
- 1 bay leaf
- 1 tsp Sweet paprika powder
- Salt
- black pepper (freshly ground)
- 500 ml Guinness beer
- 100 ml dry red wine
- 1 tbsp Cornstarch
- 2 tbsp chopped parsley

Rinse the meat and cut into large cubes. Peel and finely dice the onion and garlic. Peel the potatoes and carrots, cutting both into rough pieces.

Heat the oil in a pressure cooker and brown the meat until it turns colorless. Add the onion and garlic for a short time, then add the potatoes and carrots. Add the bay leaf, paprika, salt and pepper, and pour in the beer and wine. Wipe the rim of the pot if necessary and seal the cooker. Increase heat until the second ring appears and maintain that heat for 25 minutes.

Afterwards remove from the stove and once the pressure has fully released open the cooker. Place briefly on a hot plate. If more sauce is desired, add a little beer or water. Dissolve the cornstarch in 2-3 tbsp cold water, stir in, and bring to a boil again until the sauce thickens. Season with salt and pepper, stir in parsley, and serve.
