Beef Pumpkin Goulash

Ingredients
- 700 g beef (from the top sirloin)
- 400 g pumpkin flesh (seedless, diced)
- 1 green bell pepper
- 1 red bell pepper
- 1 onion
- 1 Garlic clove
- 1 Tbsp clarified butter
- 400 ml meat broth
- 1 tbsp Tomato Paste
- 2 tsp paprika powder (hot)
- 2 tsp flour
- 1 tsp curry powder
- 2 tsp chopped rosemary needles
- Salt
- ground black pepper

Wash, trim, halve, deseed and dice the bell peppers.

Peel and finely chop the onion.

Cut the beef into bite-sized pieces and sear them in hot clarified butter in batches until browned; season with salt and pepper, then remove from the pan.

Sauté the onion and pressed garlic in the remaining fat, sprinkle with flour and paprika powder, add tomato paste, stir well, and let it simmer for a few minutes.

Return the beef to the pot, stir, pour in the broth, cover, and simmer for about 30 minutes.

Add the pumpkin and bell pepper cubes, curry, and rosemary; season with salt and pepper, cover again, and continue simmering for another 30 minutes until the meat and pumpkin are tender. Taste again before serving.
