Kale and Sausage Stew with Potatoes

Ingredients

  • 1.5 kg fresh kale
  • Salz
  • 3 onions
  • 40 g clarified butter
  • 500 g Mettwurst (whole piece)
  • 0.4 l meat broth
  • 400 g waxy potatoes
  • 2 tbsp oatmeal
  • Pfeffer (ground)
  • 0.5 tsp coarsely crushed piment

    Break the kale leaves from the stems, cut off thick stalks, slice leaf tips flat in the middle, wash leaves well and blanch in plenty of boiling salted water for 5 minutes. Drain, shock with cold water, let drain thoroughly and chop finely. Peel and dice onions. Heat clarified butter and sauté onions. Cut sausage into large pieces, pierce several times with a toothpick and add to the kale and onions.

    Pour hot meat broth over everything, cover and simmer gently for 30 minutes. Remove sausage and continue cooking kale for another hour. Peel, wash, halve potatoes, place in a pot of salted water and cook for 25 minutes. After cooking, bind kale with oatmeal. Add sausage and well-drained potatoes, season with salt, pepper and piment before serving.
