Beef Tacos with Guacamole

Ingredients
- 4 tomatoes
- 2 Garlic cloves
- 4 Spring Onions
- 1 tbsp Olive Oil
- 600 g ground beef
- Salt
- Pepper
- 2 ripe avocados
- 2 tbsp Lime juice
- 80 g cream cheese (4 tbsp)
- Cayenne pepper
- 16 taco shells
- 2 stems cilantro
Instructions

Wash the tomatoes, pat dry, quarter them, remove seeds and dice into small cubes. Peel the garlic and finely chop.

Wash the spring onions, pat dry, trim and slice into thin rings.

Heat oil in a pan. Brown the ground beef over medium heat for about 5 minutes until crumbly. Add the spring onions and garlic and cook together for about 2 more minutes. Stir in the tomatoes, season with salt and pepper, then remove from heat.

Halve the avocados, remove pits, gently squeeze the flesh out of the skins, dice into small cubes and mix with lime juice. Set aside half of the cubes; mash the rest with a fork for the guacamole. Mix in the cream cheese and season with salt and cayenne pepper.

Fill the taco shells with the beef mixture, sprinkle with avocado cubes and top with the guacamole. Wash the cilantro, shake dry, pluck the leaves and scatter over the tacos.
