Beef Strips with Peanuts and Broccoli

Ingredients

  • 300 g beef (e.g., sirloin)
  • 2 tbsp fish sauce (optional more)
  • 2 red bell peppers
  • 1 red chili pepper
  • 1 stalk Celery
  • 2 onions
  • 2 Garlic cloves
  • 250 g broccoli florets
  • 100 g shiitake mushrooms
  • 5 g ginger (1 piece)
  • 2 tbsp peanut oil
  • 30 g peanuts
  • 2 tbsp green curry paste
  • 100 ml coconut milk
  • Pepper

Instructions

    Rinse the beef, pat dry, cut into strips. Mix with fish sauce and let marinate in the fridge for 10 minutes.

    Meanwhile wash and dry the bell peppers and chili pepper. Dice the peppers, finely chop the chili. Wash and slice the celery. Peel the onions and garlic. Cut the onions in half and into strips, finely mince the garlic. Drain the broccoli well. Clean the mushrooms and cut into pieces. Peel and grate the ginger.

    Heat 1 tbsp oil in a pan. Sear the beef until browned; remove. In the remaining oil sauté onions, garlic, chili, ginger and peanuts for 1–2 minutes. Add all vegetables and mushrooms gradually, stir-frying for 4–5 minutes. Stir in curry paste, add a splash of water and coconut milk to deglaze. Return the beef and simmer for 5–10 minutes.

    Season with fish sauce and pepper to taste.
