Beef Strips in Bell Pepper Sauce

Ingredients

  • 500 g beef fillet
  • 2 yellow bell peppers
  • 2 red bell peppers
  • 250 g Cherry Tomatoes
  • 4 Garlic cloves
  • 1 red chili pepper
  • 2 tbsp olive oil
  • Basil
  • 200 ml vegetable broth
  • Salt
  • Pepper

Instructions

    Pat the beef fillet dry and cut into 5 cm long strips. Wash, trim, and slice the bell peppers into thin strips. Wash and halve the tomatoes.

    Peel the garlic and finely dice it. Wash, halve, seed, and finely chop the chili pepper. Heat oil in a pan. Sear the beef on high heat for 2–4 minutes until browned. Remove and set aside. Add garlic, tomatoes, chili, and bell peppers to the pan and sauté for 2–4 minutes.

    Add vegetable broth to the vegetables, stir in basil and beef, season with salt and pepper, and simmer over low heat for 10–15 minutes. Taste the Beef Strips again and serve on four pre-warmed plates.
