Beef Stir‑Fry with Three Kinds of Beans

Ingredients

  • 800 g beef (e.g., shoulder)
  • 2 Garlic cloves
  • 400 g mixed dried beans (red, white and black)
  • 2 tbsp flour
  • 3 tbsp oil
  • 1 tbsp Tomato Paste
  • 1 tbsp hot paprika powder
  • 2 chili peppers
  • Cayenne pepper
  • 500 ml meat broth
  • 1 bunch spring onions
  • Salt

Instructions

    Soak the beans overnight.

    Wash, pat dry and chop the beef into bite‑sized pieces.

  3. 3.

    Peel and finely mince the garlic.

  4. 4.

    Wash and finely mince the chili peppers.

  5. 5.

    Wash the spring onions, trim them, slice the green parts into thin strips and soak in cold water; cut the white parts diagonally into slices.

    Brown the meat in hot oil, add garlic and tomato paste, dust with flour, then deglaze with broth. Add beans, paprika powder and chilies, simmer for about 1½ hours, adding more liquid if needed and stirring occasionally. In the last 30 minutes add the spring onion rings. Finish by seasoning with salt and cayenne pepper, garnish with spring onion strips and serve.
