Beef stir-fry with mushrooms

Ingredients
- 500 g beef fillet
- 50 ml dry white wine
- 1 Egg white
- pepper (ground)
- 1 pinch sugar
- 1 onion
- 1 Garlic clove
- 250 g shiitake mushrooms
- 6 Spring Onions
- 2 tbsp peanut oil
- 3 tbsp sweet chili sauce
- Salt
- pepper (ground)
Instructions

Cut the fillet into strips. Whisk together wine, egg white, pepper and sugar. Peel and finely dice the onion and garlic; add to the wine mixture. Mix in the meat and marinate for about 1 hour.

Clean the mushrooms and slice them. Trim the spring onions and cut into ~4 cm pieces.

Remove the meat from the marinade, drain, and sear in hot oil while stirring for about 2 minutes. Add the onion and mushrooms and cook for another 5 minutes while stirring. Then add sweet chili sauce, season with salt and pepper, and serve. Pair with basmati rice.
