Ingredients
- 4 beef steaks about 220 g each (e.g., ribeye)
- Salt
- 2 tbsp Vegetable oil
- 40 ml cognac
- 250 ml beef stock
- 100 ml heavy cream
- 1 tsp peppercorns
- 2 fresh garlic cloves
- 50 g grated Parmesan
- 1 tbsp freshly chopped parsley

Preheat the oven to 100°C with fan and top heat.

Rinse the steaks and pat dry. Season with salt and brown in a hot pan with oil for 1-2 minutes on each side. Transfer to a rack (or baking tray underneath). Place in the oven on the middle rack. Cook 8-20 minutes depending on thickness and desired doneness.

Meanwhile, pour out the oil from the pan and deglaze with cognac. Add the stock, bring to boil and reduce slightly. Stir in the cream and simmer a few minutes. Whisk occasionally until the sauce is slightly thickened. Grind peppercorns in a mortar, add to the sauce and season with salt.

Remove the steaks from the oven and switch on the grill function. Peel and chop the garlic. Sprinkle parmesan over the steaks and melt under the hot grill.

Fill small bowls with the sauce and sprinkle parsley. Serve with the steaks.
