Beef steak on mashed potatoes

Ingredients
- 4 hip steaks (≈220 g each)
- Salt
- Pepper (freshly ground)
- 2 tbsp clarified butter
- 1 kg potatoes
- 200 ml milk
- 50 g butter
- Salt

- nutmeg
- 500 g sugar snap peas
- rosemary (for garnish)
Instructions

Peel the potatoes, cut into small pieces and cook in salted water for about 20 minutes. Bring the milk to a boil. Drain the potatoes and mash with milk and butter. Season with salt, pepper and nutmeg.

Season the steaks with salt and pepper and fry each side for about 1-2 minutes (depending on preference). Wrap in foil and bake in a preheated oven at 80°C for about 20-30 minutes to finish cooking.

Meanwhile wash and trim the sugar snap peas and cook them in boiling salted water for about 4 minutes, then drain and set aside.

Plate the mashed potatoes with the sugar snap peas and steaks on each plate and garnish with rosemary before serving.
