Beef Skewers with Cucumber Salad

The beef skewers with cucumber salad from Spoonsparrow look great and taste just as good.

Ingredients

  • 600 g beef sirloin
  • 3 tbsp Sesame oil
  • 2 tbsp Soy sauce
  • Pepper
  • 1 tsp chili powder
  • 2 tsp Honey
  • 400 g small salad cucumber (1 small cucumber)
  • 1 red apple
  • 3 spring onions
  • 2 sprigs Mint
  • 45 g roasted nut kernels (3 tbsp; e.g., hazelnuts, almonds, peanuts)
  • 1 Lime (juice)
  • Salt
  • 3 tbsp olive oil
  • 25 g light sesame seeds (2 tbsp)

Instructions

    Trim and pat dry the beef, cut into thin strips, and thread onto 8 wooden skewers. Whisk together 2 tbsp sesame oil, soy sauce, pepper, chili powder, and 1 tsp honey. Coat the skewers in the mixture and let marinate for 10 minutes.

    Meanwhile, peel the cucumber, quarter lengthwise, and chop into pieces. Core and cube the apple. Trim the spring onions, wash, and slice thinly into rings. Wash the mint, pat dry, and tear off leaves. Roughly chop the nuts.

    Whisk lime juice with salt, pepper, remaining honey, and olive oil; combine with prepared salad ingredients.

    Heat remaining sesame oil in a grill pan. Drain the skewers and sear each side for 2–3 minutes over medium heat. Drizzle leftover marinades over them and sprinkle with sesame seeds. Serve the salad alongside the skewers.
