Beef Roll Roast

Ingredients
- 1 tbsp Olive Oil
- 2 onions (finely chopped)
- 180 g Tomato paste
- 4 tbsp apple cider vinegar
- 100 ml White wine
- 1 tsp medium-hot mustard
- 100 ml Worcestershire sauce
- 1 tbsp mixed chopped herbs (parsley, rosemary, thyme)
- 4 tbsp liquid honey
- 2 minced garlic cloves
- 1 kg Beef roll roast (e.g., from the top sirloin)

Heat the oil in a saucepan and gently sauté the onions over low heat for 3-4 minutes until translucent. Add the tomato paste and vinegar, bring to a boil, then simmer for about 2 minutes while stirring. Next add the white wine, mustard, Worcestershire sauce, herbs, honey, and garlic; mix well. Reduce heat to the lowest setting and let simmer for about 15 minutes.

Stir occasionally, then transfer to a bowl and allow to cool. Preheat the oven to 200 °C (400 °F) with both top and bottom heating. Rinse the meat, pat dry, roll it up, and tie with kitchen twine (or have it prepped by your butcher). Brush with sauce, place in a greased roasting pan, and roast in the preheated oven for 45-50 minutes. Turn occasionally and brush with remaining sauce as needed. Slice and serve.
