Ingredients

  • 3 cloves garlic
  • 2 red onions
  • 2 onions
  • 1 Zucchini
  • 2 carrots
  • 1.2 kg beef stew roast (flank)
  • 2 tsp mustard
  • 3 tbsp oil
  • Salt
  • ground pepper
  • 250 ml meat broth

Instructions

    Season the meat with salt and pepper, spread mustard over it, and tie it with kitchen twine if needed. Brown the meat all around in a roasting pan with oil. Add the meat broth, cover, and braise in a preheated oven at 180°C for about 1 to 1½ hours, spooning the drippings over the roast occasionally.

    Peel and roughly chop the onions. Peel the carrots, wash the zucchini, and cut all into large pieces.

    Peel the garlic and coarsely chop it.

    About 25 minutes before the end of braising time, arrange the vegetables with the garlic around the roast, season with salt and pepper, and finish cooking uncovered.
