Ingredients

  • 5 onions
  • 2 Garlic cloves
  • 1.5 kg pre‑cooked beef roast
  • Salt
  • black pepper (freshly ground)
  • 2 tbsp Vegetable oil
  • 100 ml port wine
  • 500 ml beef stock
  • 1 tbsp balsamic vinegar
  • 2 sprigs thyme
  • 1 bay leaf

Instructions

    Preheat the oven to 160°C (320°F) with top and bottom heat. Peel the onions and garlic. Wash the meat, pat dry, season with salt and pepper, and sear it on all sides in a roasting pan using hot oil. Add the onions and garlic and cook together.

    Remove the roast and pour port wine and beef stock over the drippings. Add balsamic vinegar, thyme, and bay leaf, then return the roast to the pan. Roast in the preheated oven for 2–2½ hours.

    Turn the roast occasionally and baste it with the sauce. When done, remove from the oven, place on a platter, slice, and serve with the onion gravy.
