Ingredients

  • 1 kg beef roast (e.g., shoulder)
  • 1 kg small carrots
  • 5 onions
  • 2 tbsp oil
  • 0.5 l meat broth
  • 1 bay leaf
  • 1 tsp marjoram (crushed)
  • 5 juniper berries
  • 1 tsp peppercorns
  • basil (for garnish)
  • Salt
  • ground pepper

Instructions

  1. 1.

Wash the beef roast, pat dry, season with salt and pepper, then sear it briefly on all sides in hot oil in a roasting pan. Pour in broth and simmer covered at 160°C for about 1 hour, turning the meat occasionally.

  2. 2.

Peel carrots and onions; halve the onions and clean the carrots. Add them to the pot along with marjoram, juniper berries, and peppercorns, then cover and simmer for another hour. Remove the lid and brown the meat for an additional 20-30 minutes. Optionally remove the peppercorns, juniper berries, and bay leaf from the broth, season with salt and pepper to taste, and serve the beef, broth, and vegetables in a bowl garnished with basil leaves.
