Beef Grapefruit Salad with Pine Nuts

Ingredients

  • 600 g beef steak (fillet; 4 steaks)
  • Salt
  • Pepper
  • 1 tbsp Sunflower oil
  • 2 pink grapefruits
  • 2 tbsp light sesame oil
  • 15 g capers (glass; 1 tbsp)
  • 15 g pine nuts (1 tbsp)
  • 1 Shallot
  • 200 g red cabbage
  • 10 g parsley (0.5 bunch)

Instructions

    Pat steaks dry and season with salt and pepper.

    Heat sunflower oil in a non-stick pan. Sear steaks over high heat for about 3 minutes per side until browned. Remove from heat, let them finish cooking to pink, then cool slightly.

    Meanwhile peel grapefruits thoroughly and cut out the segments. Squeeze remaining flesh and mix juice with sesame oil. Add capers and pine nuts.

    Peel shallot and slice into thin rings. Wash, trim, and shred cabbage into fine strips. Rinse parsley, shake dry, and roughly chop. Slice steaks into strips.

    Combine all prepared salad ingredients with the dressing and season with salt and pepper to taste.
