Beef Fillet with Morel Cream

- 800 g beef fillet
- 2 tbsp oil
- Salt
- ground pepper from grinder
- 20 g dried morels
- 2 tbsp clarified butter
- 250 g whipping cream
- 2 tbsp ice‑cold butter

Wash the meat, pat dry, remove any outer sinew if present. Mix oil with 1 tsp ground pepper and rub all over the fillet; cover and refrigerate overnight. Rinse the morels in a sieve, drain well, discard stems, then soak them in 350 ml water. Heat clarified butter, sear the fillet on all sides at moderate heat, season with salt. Transfer to a preheated oven (220 °C, second rack from bottom) and roast for about 10 minutes, turning halfway through.

Remove the roast, wrap it in foil and let rest in the turned‑off oven for another 10–12 minutes.

Deglaze the pan with 1/8 l water plus the morel soaking liquid. Strain the stock into a small pot and reduce slightly. Stir in cream, then simmer gently. Fold in butter in small cubes and add the well‑pressed morels to the sauce; season to taste.

Slice the fillet for serving, arrange on plates with the morel cream.
